Homemade Coconut Milk

I’ve taught you how to make almond milk, cashew milk, and now….drum roll please…..I have posted a video on how to make Homemade Coconut Milk. It is SO easy, uses only 2 ingredients, no fancy equipment is needed and it tastes absolutely fabulous!

I decided to make my own coconut milk after being unable to find a boxed/aseptic package of coconut milk that didn’t contain some sort of gum. Guar gum and carrageenan are the “gums” that you’ll most commonly find on the ingredient list and are used as a thickening agent. Carrageenan in particular is known to exacerbate leaky gut, have an inflammatory effect, and has even been classified as a carcinogen. Unfortunately, Guar gum isn’t much better.

The truth is that these additives, and the fact that they are then stored in a box or can, only detract from the wonderful, naturally sweet flavor that coconut imparts. I’ve never liked any of the boxed, non-dairy milks for use in cereal and coffee. Now I’m addicted to Honey Nut O’s because they are gluten free and taste SO good with homemade coconut milk. Don’t even get me started on lattes!

The good news is that homemade coconut milk can be used in place of both boxed AND canned coconut milk. It contains as much fat as you’d get in a 15 oz can of coconut cream, which can be separated out and used to make whipped coconut cream, or in a dish such as Panang Curry. The remainder is a thin milk like you’d get in the box containers. It’s great to use anywhere, and in any recipe where milk is called for.
