Tex-Mex Black Bean and Corn Salad

Tex-Mex Black Bean and Corn Salad is a favorite at my house. I especially love to make it when I can pick tomatoes ripe off the vine, snip fresh cilantro, and slice delicious corn off the cob.

I’m a big fan of beans. Full of fiber, filling, inexpensive, and easy to make, beans make up a large percentage of many healthy diets in the world. In fact, one of the dietary consistencies that were found among centenarians, was that they ate beans! (source)

Beans make a great filler and can be used in so many applications. Whether added to chili, soups and stews, or even used as a flour to make delicious Gluten Free Italian Farinata Flatbread, beans are super versatile. I’ve even used white bean flour instead of regular flour to make chocolate pudding (and it was GOOD!).

Versatile, inexpensive, and super healthy, Tex-Mex Black Bean and Corn Salad makes a fabulous side-kick to tacos, fajitas, steak and more. Make extra though, it’s great all on it’s on for a filling and easy lunch on the run!

Tex-Mex Black Bean and Corn Salad makes a fabulous and filling side-kick to tacos, fajitas, steak, or can be eaten on it's own.

Ingredients

  1. 2 cups cooked black beans or 1 (15 ounce) can, drained and rinsed

  2. 2 ripe tomatoes, chopped, or 1 (15 ounce) can fire-roasted tomatoes*

  3. 1 red bell pepper, diced

  4. ½ sweet onion, diced*

  5. 1 cup frozen corn kernels (defrosted)- If you're following the slow carb diet replace corn with diced avocado

  6. 1 (4 ounce) can diced mild green chilies or 1 finely diced Anaheim or Poblano chili*

  7. 2 Tbs chopped cilantro

  8. 2 Tbs freshly squeezed lime juice

  9. 1 tsp chili powder

  10. ½ tsp ground cumin

  11. ½ tsp dried oregano

  12. Sea salt (to taste)

  13. Cayenne pepper( you decide how much- the more the spicier)

Instructions

  1. Combine thoroughly and let stand for 10 minutes to let flavor develop. Serve at room temperature.

Notes

Some of my favorite additions: Avocado Garlic Feta Cheese-crumbled * If you don't have these items on hand, or just want to make it quick and easy on yourself, substitute salsa for these ingredients.
