Craving Indian food? I whip these lentils up anytime I need a fast, inexpensive and tasty dish. Filled with protein and anti-inflammatory properties, Curried Lentils are flavorful, filling and simple to prepare. If you’re on the slow carb diet (The 4-Hour Body by Tim Ferriss) these are SCD friendly! P.S. They’re fabulous reheated for lunch the next day!
Curried Lentils
1/2 cup lentils, rinsed
1 cup water
3/4 cup light coconut milk
1-2 tsp red curry paste (find in the Asian section of your market)
salt to taste
1/2 tsp garam masala
1/4 tsp turmeric
Instructions
Rinse lentils and place in a saucepan with the water. Bring to a boil, then cover, and simmer over low heat for 15 minutes. Stir in the curry paste, coconut milk, spices and season with salt to taste. Return to a simmer, and cook for an additional 10 to 15 minutes, until tender.
