Marinated Sesame Asparagus

One of my favorite side dishes sold down at the local deli is this Marinated Sesame Asparagus. Although they charge big bucks for this delicacy, it’s extremely simple to make. Throw the ingredients in a bag, leave it for a few hours or overnight, and voila, you’ve got a delicious and healthy side dish that is perfect for weekday lunches or Easter Brunch.

A neighbor shared this recipe for Marinated Sesame Asparagus with me years ago. It’s so good that I’ve been known to eat the asparagus straight out of the bag while hiding behind the refrigerator door (so I don’t have to share!). It’s so yummy and so easy!

Marinated Sesame Asparagus

Quick, easy, and delicious this is the same salad you'll find featured at your local deli.

Ingredients

  1. 1.5-2 lbs asparagus

Marinade

  1. 4 tsp. soy sauce

  2. 1 tsp. organic white sugar

  3. 2 tsp. toasted sesame oil

  4. 1 Tbs. sesame seeds

Instructions

  1. Par-boil* 1.5-2 lbs asparagus for 1 minute. Rinse immediately with cold water.

  2. Add marinade ingredients to a gallon sized plastic bag.

  3. Add asparagus (you can slice the asparagus into bite sized pieces if you desire or leave whole) to the bag.

  4. Push as much air out of the bag and refrigerate for 2-24 hours.

  5. Serve on a pretty dish!

Notes

*Parboil means to boil water, and throw the asparagus in just long enough to barely cook it. Generally about a minute. Immediately rinse under cold running water or add to an ice bath.
