“Every cloud has a silver lining” and that’s truly the case when it comes to my almond butter blondies. I was perfecting my technique on how to make homemade almond butter in my Vitamix and kept having failure after failure (I wasn’t roasting the almonds- apparently it’s a key step!). In lieu of giving all of the expensive almond sand I had made to my chickens, I created a recipe that would utilize the “almost” almond butter and turn it something not only edible, but fabulous!
That being said, Paleo Almond Butter Blondies are both versatile and forgiving. If you don’t happen to have an almond butter catastrophe on your hands, then go ahead and just use any kind of almond butter. Rich, with a lovely chewy brownie texture, the chocolate chips melt in your mouth while the almond butter stands up and says “howdy ma’am, nice to meet you.”
My kids often want a treat after school, and because this recipe is full of protein and healthy fat, I often serve these almond butter blondies with a tall glass of cold, raw milk. Filling, delicious and super easy to throw together and bake, you’ll file this one in the recipe box for sure!

Paleo Almond Butter Blondies
Moist, chewy, and filling, this Paleo/grain and dairy free blondie is bound to become a family favorite

Ingredients
1 cup *almond butter
⅓ cup honey
1 egg
1 Tbsp. vanilla
½ tsp. baking soda
¼ tsp. baking powder
½ tsp. sea salt
½ cup dark chocolate chips
Instructions
Preheat oven to 350 degrees
In a large bowl (I use my Kitchen Aid), mix almond butter and honey
Add egg and vanilla and mix until well incorporated.
Add coconut flakes
Sprinkle in baking soda and powder
Add chocolate chips
Scrape contents into an ungreased (preferably glass) 8" square baking dish
Press firmly into pan
Bake for 18-24 minutes or until a toothpick inserted in center comes out with dry crumbs.
Notes
The dough will be quite firm and very oily seeming. Don't worry, it will come together when baked! *If using a messed up batch of homemade almond butter add 1-2 Tbs of coconut oil to the mix.
