Since it’s nearing Easter, and the kids and I have been blowing eggs to decorate, I thought I’d share a recipe that uses LOTS of eggs! My Sunday Brunch Casserole is not only perfect for Easter brunch, it makes a super easy weekday breakfast when made ahead and reheated in the toaster oven or microwave.
I’ve made this recipe for so long that I don’t even know where I got it from in the first place. I just know that every single person I have served it to has asked me for the recipe!
Keep in mind that this is a recipe that can easily be used as a jumping off point. Change up the cheese (gruyere, smoked gouda, etc), use ham or sausage instead of bacon, add broccoli or sauteed mushrooms, heck, maybe it would even be good with shredded sweet potatoes instead of regular (be sure to let me know in the comments below what awesome combination you create!).

Sunday Brunch Casserole

A hearty and delicious breakfast that is perfect for a special occasion, or heated up as leftovers for a quick weekday breakfast.
Ingredients
½ pound sliced bacon
½ cup chopped onion
½ cup chopped red pepper
12 eggs
1 cup milk
16 oz package frozen shredded style hashbrowns, thawed (or simply shred your own and leave the peel on)
1 cup (4 oz) shredded raw cheddar cheese
1 teaspoon salt
½ teaspoon pepper
¼ teaspoon dill
Instructions
In a skillet cook bacon until crisp.
Remove with a slotted spoon, crumble and set aside.
In the bacon drippings, saute onion, and red pepper until tender. Remove with a slotted spoon.
Beat eggs and milk (substitute) in a large bowl.
Stir in hashbrowns, cheese, salt, pepper, dill, onion, red pepper, and bacon.
Transfer to a greased 13x9x2" baking dish.
Bake uncovered at 350° F for 35-45 minutes or until a knife inserted near the center comes out clean.
Notes
Remember that bacon is actually a very healthy food when the pig has been raised on a species appropriate diet. Look for "Pastured" Pork.
